Ingredients
- 2 C rice
- 4 C water
- Juice of 3 large lemons (or 4 small lemons)
- 2¼ Tsp salt
- 2 Tbsp oil
- 1¼ Tsp black mustard seeds
- 1 Tbsp chana dal
- 1 Tsp split urad dal
- 3 Tbsp peanuts
- 2 green chilies cut lengthwise
- 10-12 fresh curry leaves
- ½ Tsp yellow asafetida powder
- 1¼ Tsp turmeric powder
Preparation
- Combine the rice and water in a saucepan; bring to a boil over moderately high heat.
- Stir the rice once, reduce the heat to very low and cover with a tight fitting lid.
- Cook until rice is tender.
- Cool the rice in a large mixing bowl or plate.
- Combine the lemon juice and salt in a cup.
- Discard the seeds.
- Heat oil in a pan over moderately high heat.
- Add the mustard seeds, when they crackle, add chana dal, urad dal and peanuts.
- Stir fry until golden brown.
- Add the chilies, curry leaves and asafetida, and sauté for a moment until fragrant.
- Quickly add the turmeric, stir to mix and immediately add to the rice.
- Add the lemon juice solution. Mix well.
Serves
- 4-6
