Ingredients
- ¼ cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1/2 tsp salt
- ½ tsp pepper
- 1 tbsp Dijon mustard
- 3 cups of mixed greens (mixed colored leafy lettuces)
- 1 cups shredded cabbage
- 1/2 bulb fennel, trimmed, thinly sliced
- 1 red pepper, thinly sliced
- ½ cup fresh Italian parsley leaves
- ¼ cup fresh mint leaves
Preparation
- Whisk oil, vinegar, honey, salt, and pepper in a large bowl until blended.
- In a big bowl, mix and toss all the ingredients.
- Add dressing to toss when it is ready to serve.
